The total protein content (%) of the raw materials are 80% in pea, 72% in soybean, 79% in rice, and 81% in wheat. Adopted from ZX Lu, et al.<sup>2.<\/sup><\/p>\n<p>For this reason, pea protein is popular in the sports nutrition category as a plant-based alternative to <a href=\"https:\/\/www.ulprospector.com\/en\/na\/Food\/Product\/search?k=Whey%20Proteins&amp;sug=1&amp;st=31&amp;utm_source=KnowledgeCenter&amp;utm_medium=article&amp;utm_campaign=2021fbn&amp;utm_term=peaprotein\" target=\"_blank\" rel=\"noopener\">whey protein<\/a>. In fact, compared with whey protein, pea protein has demonstrated similar gains in muscle thickness with resistance training in men and women.<sup>3,4.<\/sup><\/p>\n<p>Pea protein also has antioxidant, antihypertensive, anti-inflammatory, and antihypercholesterolemic effects to support its use as a functional food ingredient.<sup>5<\/sup><\/p>\n<p>However, the applications of pea protein in food products are a challenge due to its poor functional performances, especially in fortified beverages.<\/p>\n<p>To expand the application of pea protein in food formulation, food scientists have explored ways to improve the functional properties of pea protein by modifying its inherent structure that involves physical, chemical, and enzymatic treatments.<\/p>\n<h2>Growth and market<\/h2>\n<p>The demand for protein as a functional food ingredient or dietary supplement continues to climb as consumers increasingly recognize the beneficial effects of protein for blood sugar control, weight management, and muscle health.<\/p>\n<p>While <a href=\"https:\/\/www.ulprospector.com\/en\/na\/Food\/search?k=dairy%20protein&amp;st=31&amp;utm_source=KnowledgeCenter&amp;utm_medium=article&amp;utm_campaign=2021fbn&amp;utm_term=peaprotein\" target=\"_blank\" rel=\"noopener\">dairy proteins<\/a> remain a common and popular option for meeting this demand, many consumers\u2019 preferences have shifted towards hypoallergenic and presumably healthier plant-based proteins like pea protein.<\/p>\n<p>Indeed, the global pea protein market size was valued at $213.1 million in 2020 and is expected to grow at a compound annual growth rate (CAGR) of 12.7% through 2028, according to a report from Grand View Research.<sup>6<\/sup><\/p>\n<p>The use of pea protein and other plant-based protein in food formulations has also grown in popularity among manufacturers due to greater sustainability and lower production costs compared with some animal-based proteins.<\/p>\n<hr \/>\n<h2>Visit <a href=\"https:\/\/www.ulprospector.com\/en\/na\/Food?=&amp;st=31&amp;utm_source=KnowledgeCenter&amp;utm_medium=article&amp;utm_campaign=2021fbn&amp;utm_term=peaprotein\" target=\"_blank\" rel=\"noopener\">ULProspector.com<\/a> to find the food and beverage ingredients you need for your next formulation.<\/h2>\n<hr \/>\n<h3>References<\/h3>\n<ol>\n<li>Gorissen SHM, Crombag JJR, Senden JMG, et al.
