Many people know of lutein as a component of egg yolks and as a critical player in healthy human eye retina function, as well as its antioxidant properties throughout various human organ systems and tissues.<sup>1<\/sup> It has also been used as a food additive for its pigmenting properties: lutein lends a yellow or orange-red pigment to foods as it absorbs blue light.<sup>1<\/sup> There are several formulation challenges, however.<\/p>\n<p>Lutein belongs to the xanthophyll family of carotenoids and is found naturally in egg yolks, animal fats, and plants such as flowers, grains, fruits, and vegetables, including spinach and kale.<sup>2<\/sup> The market for lutein is segmented into pharmaceuticals, dietary supplements, foods, and animal and fish feed industries. Typically, in pharmaceuticals, dietary supplements, and foods, lutein is partnered with <a href=\"https:\/\/www.ulprospector.com\/en\/na\/Food\/Product\/search?k=Zeaxanthin&amp;sug=1&amp;st=31&amp;utm_source=KnowledgeCenter&amp;utm_medium=article&amp;utm_campaign=2022fbn&amp;utm_term=lutein&amp;utm_content=Marchetti\" target=\"_blank\" rel=\"noopener\">zeaxanthin<\/a>, which is a similar molecule and also provides antioxidant functions in the human body.<sup>3<\/sup> These functions are the nutrition-related reasons that consumers would be inclined to purchase food items formulated with lutein.<\/p>\n<h3>Challenges to formulating using lutein<\/h3>\n<p>The challenges to formulation using lutein are several and largely related to its molecular instability:<sup>2<\/sup><\/p>\n<ul>\n<li>Heat from boiling, steaming, sauteing, or other methods in the processing of foods can cause de-esterification or cis\/trans isomerization of lutein molecules.<\/li>\n<li>Extreme pH outside of the range of 4.0-8.0 can also cause de-esterification or cis\/trans isomerization of lutein molecules.<\/li>\n<li>Light can cause the creation of colorless molecules of low molecular weight.<\/li>\n<li>Oxygen presence causes lutein\u2019s antioxidant properties to react.<\/li>\n<li>Lutein is fat-soluble and water-insoluble.<\/li>\n<\/ul>\n<h3>Overcoming the challenges<\/h3>\n<p>There are some methods that help to overcome these formulation challenges with lutein:<sup>2<\/sup><\/p>\n<ul>\n<li>Freezing<\/li>\n<li>Inclusion of antioxidants and exclusion of oxygen via vacuum sealing or airtight containers<\/li>\n<\/ul>\n<p>There are products being made to improve the dispersion of lutein in water, such as a delivery method that uses a sucralose monolaurate emulsifier, which has been found to allow the addition of lutein to clear liquid beverages.<sup>4\u00a0<\/sup><\/p>\n<p><strong>Recommended reading<\/strong><\/p>\n<ol>\n<li><a href=\"https:\/\/en.wikipedia.org\/wiki\/Lutein\" target=\"_blank\" rel=\"noopener\">Lutein<\/a><\/li>\n<li><a href=\"https:\/\/www.sciencedirect.com\/science\/article\/pii\/S1756464619306954#:~:text=Lutein%20form%20part%20of%20the,animal%20and%20fish%20feed%20industries.\" target=\"_blank\" rel=\"noopener\">Lutein as a functional food ingredient: Stability and bioavailability<\/a><\/li>\n<li><a href=\"https:\/\/www.healthline.com\/nutrition\/lutein-and-zeaxanthin#eyes\" target=\"_blank\" rel=\"noopener\">Lutein and Zeaxanthin: Benefits, Dosage, and Food Sources<\/a><\/li>\n<li><a href=\"https:\/\/www.foodnavigator.com\/Article\/2004\/01\/16\/New-lutein-fortified-formulations-to-market\" target=\"_blank\" rel=\"noopener\">New lutein fortified formulations to market<\/a><\/li>\n<\/ol>\n","protected":false},"excerpt":{"rendered":"<p>Lutein is an up-and-comer in the food formulation industry.
