What results is a slimy substance, which is precipitated from its growth medium, dehydrated and ground into a fine powder.<\/p>\n<p>It is classified as INS 415 in the Codex Alimentarius and was approved for use in food by the FDA in 1969 and the EU in 1980. It is on the approved synthetic ingredients list for the National Organic Program in the U.S. and is permitted in products labeled \u201corganic\u201d or \u201cmade with organic.\u201d \u00a0Organic sources are also available from some suppliers.<\/p>\n<h3><b>10 Important Properties of Xanthan Gum<\/b><\/h3>\n<ol>\n<li>Soluble in both hot and cold water.<\/li>\n<li>Effectively works across all pH ranges.<\/li>\n<li>Salt in a formulation does not impact its activity, even at very high levels.<\/li>\n<li>Tolerant to alcohol in a formulation.<\/li>\n<li>Resistant to high heat and enzymes.<\/li>\n<li>Has good freeze\/thaw stability, due to its ability to bind water.<\/li>\n<li>Has a synergistic effect when added with <a href=\"http:\/\/www.ulprospector.com\/en\/na\/Food\/search?k=locust+bean+gum&amp;st=31\" target=\"_blank\" rel=\"noopener\">locust bean gum<\/a> (<a href=\"http:\/\/www.ulprospector.com\/en\/eu\/Food\/search?k=locust+bean%20gum&amp;st=31\" target=\"_blank\" rel=\"noopener\">EU<\/a>), <a href=\"http:\/\/www.ulprospector.com\/en\/na\/Food\/search?k=guar+gum&amp;st=31\" target=\"_blank\" rel=\"noopener\">guar gum<\/a> (<a href=\"http:\/\/www.ulprospector.com\/en\/eu\/Food\/search?k=guar+gum&amp;st=31\" target=\"_blank\" rel=\"noopener\">EU<\/a>), <a href=\"http:\/\/www.ulprospector.com\/en\/na\/Food\/search?k=konjac&amp;st=31\" target=\"_blank\" rel=\"noopener\">konjac<\/a> (<a href=\"http:\/\/www.ulprospector.com\/en\/eu\/Food\/search?k=konjac&amp;st=31\" target=\"_blank\" rel=\"noopener\">EU<\/a>), and some starches. \u00a0This effect will increase the viscosity of a finished product when used with one of these materials.<\/li>\n<li>Agitation is needed when adding xanthan to liquids or lumps, also called \u201cfish eyes,\u201d, will occur. Some suppliers have produced an agglomerated xanthan, which may reduce this occurrence.<\/li>\n<li>Xanthan gum solutions exhibit pseudoplasticity or shear-thinning behavior \u2013 the viscosity will decrease when shear is applied, which aids in production.
