It\u2018s a workhorse ingredient that is well worth learning how to use.<\/p>\n<h4><strong>Key Properties:<\/strong><\/h4>\n<ul>\n<li>Good salt\/PH tolerance.<\/li>\n<li>High low shear viscosity (good suspending properties).<\/li>\n<li>High viscosity at low concentration.<\/li>\n<li>Maintains its viscosity profile with temperature.<\/li>\n<li>Good enzyme resistance.<\/li>\n<li>Safe, food approved.<\/li>\n<\/ul>\n<p>Xanthan gum was discovered by the United States Department of Agriculture, which screened a large number of biopolymers for their potential uses. It was brought into commercial production by <a href=\"https:\/\/www.ulprospector.com\/en\/na\/PersonalCare\/Suppliers\/6576\/CP-Kelco\/search?sug=1&amp;st=31\" target=\"_blank\">CP Kelco<\/a> (<a href=\"https:\/\/www.ulprospector.com\/en\/eu\/PersonalCare\/Suppliers\/2535\/CP-Kelco\/search?sug=1&amp;st=31\" target=\"_blank\">EU<\/a>) under the trade name\u00a0<a href=\"https:\/\/www.ulprospector.com\/en\/na\/PersonalCare\/search?trade=4294955827&amp;sug=1&amp;st=31\" target=\"_blank\">KELTROL\u00ae<\/a>\/<span class=\"st\">KELZAN\u00ae (<a href=\"https:\/\/www.ulprospector.com\/en\/eu\/PersonalCare\/search?trade=4294955827&amp;sug=1&amp;st=31\" target=\"_blank\">EU<\/a>)<\/span> in the early 1960s and approved for food use in 1968. It is accepted as a safe food additive in the USA, Canada, Europe, and many other countries, with E number E415.<\/p>\n<p>Xanthan is an anionic polymer that has an MW of 2-7.5 million Daltons and forms a 5-fold helical structure in water. It is produced by fermentation of <a href=\"https:\/\/www.ulprospector.com\/en\/na\/PersonalCare\/search?k=glucose&amp;st=31\" target=\"_blank\">glucose<\/a> (<a href=\"https:\/\/www.ulprospector.com\/en\/eu\/PersonalCare\/search?k=glucose&amp;st=31\" target=\"_blank\">EU<\/a>) or <a href=\"https:\/\/www.ulprospector.com\/en\/na\/PersonalCare\/search?k=sucrose&amp;st=31\" target=\"_blank\">sucrose<\/a> (<a href=\"https:\/\/www.ulprospector.com\/en\/eu\/PersonalCare\/search?k=sucrose&amp;st=31\" target=\"_blank\">EU<\/a>) by <a href=\"https:\/\/www.ulprospector.com\/en\/na\/PersonalCare\/search?k=Xanthomonas+campestris&amp;st=31\" target=\"_blank\">Xanthomonas campestris<\/a> (<a href=\"https:\/\/www.ulprospector.com\/en\/eu\/PersonalCare\/search?k=Xanthomonas+campestris&amp;st=31\" target=\"_blank\">EU<\/a>) and is precipitated by the addition of <a href=\"https:\/\/www.ulprospector.com\/en\/na\/PersonalCare\/search?k=isopropyl+alcohol&amp;st=31\" target=\"_blank\">isopropyl alcohol<\/a> (<a href=\"https:\/\/www.ulprospector.com\/en\/eu\/PersonalCare\/search?k=isopropyl+alcohol&amp;st=31\" target=\"_blank\">EU<\/a>). The precipitate is then dried and milled to the desired size. The largest global producers are Deosen Biochemicals, CP Kelco, <a href=\"https:\/\/www.ulprospector.com\/en\/na\/PersonalCare\/Suppliers\/1103\/Jungbunzlauer-International-AG\/search?sug=1&amp;st=31\" target=\"_blank\">Jungbunzlauer<\/a> (<a href=\"https:\/\/www.ulprospector.com\/en\/eu\/PersonalCare\/Suppliers\/4424\/Jungbunzlauer-International-AG\/search?sug=1&amp;st=31\" target=\"_blank\">EU<\/a>), and ADM.<\/p>\n<h4><strong>Xanthan variants commercially available include:<\/strong><\/h4>\n<ul>\n<li>KELTROL\u00ae T (Xanthan) by CP Kelco for clear products.<\/li>\n<li>KELTROL\u00ae F (Xanthan) by CP Kelco has a 1% solution viscosity of 1350 cps.<\/li>\n<li>KELTROL\u00ae Advanced Performance (Xanthan) by CP Kelco is much easier to hydrate in difficult media, even in the presence of solvent or salt, and is better for suspending solids in thin dispersions than regular grade xanthan. A 1% solution has a viscosity of13K cps.<\/li>\n<li><a href=\"https:\/\/www.ulprospector.com\/en\/na\/PersonalCare\/Detail\/581\/211530\/AMAZE-XT?st=31\" target=\"_blank\">AMAZE\u2122 XT<\/a> (Dehydoxanthan) by <a href=\"https:\/\/www.ulprospector.com\/en\/na\/PersonalCare\/Suppliers\/581\/AkzoNobel-Personal-Care?st=31\" target=\"_blank\">AkzoNobel<\/a> is a specially processed xanthan gum that has significantly higher viscosity than normal grades. When added to water, this dispersion immediately thickens without any undispersed lumps or fish eyes.<\/li>\n<li>Small quantities of <a href=\"https:\/\/www.ulprospector.com\/en\/na\/PersonalCare\/search?k=sodium+chloride&amp;st=31\" target=\"_blank\">sodium chloride<\/a> (<a href=\"https:\/\/www.ulprospector.com\/en\/eu\/PersonalCare\/search?k=sodium+chloride&amp;st=31\" target=\"_blank\">EU<\/a>) significantly increase the viscosity. George is a current member of the Society of Cosmetic Chemists and is on the scientific advisory board for Cosmetics &amp; Toiletries Magazine. While at Procter and Gamble, he worked in skin care product development, global fragrance development, and most recently oral care product development in the Oral Care Advanced Technology Innovation Group. Before being appointed a Victor Miles Research Fellow, he also served as Associate Director of Exploratory Formulation for skin care product development. While at Procter &amp; Gamble, George was one of the top inventors, with 354 granted and filed global patents (201 U.S. patents). He helped develop many of the core platform technologies used in skin care today with numerous products commercialized under the Olay, Bain de Soleil, Clearasil, Noxzema and SK2 brands. Previously, George was a Senior Chemist and Manager in the area of skin care product development, as well as the Director of Exploratory Formulation for Charles of the Ritz Group. During this time, George received the President\u2019s Cup Award for outstanding business contribution and developed numerous marketed skin care products under the Bain de Soleil, Jean Nate, Yves Saint Laurent and Charles of the Ritz Brands. George is a current member of the Society of Cosmetic Chemists and is on the scientific advisory board for Cosmetics &amp; Toiletries Magazine. He is a frequent guest lecturer for numerous key global suppliers, as well as for local and national SCC meetings. George is an avid tennis player and follower of the sport.
