There have been recent revamps of common breakfast cereals to include these grains as they become more mainstream. Let\u2019s cover a few more types of grains that are in this category.<\/p>\n<h3><b><img loading=\"lazy\" decoding=\"async\" class=\"alignleft\" src=\"https:\/\/ulprospector.ul.com\/media\/2015\/10\/Bulgarv2.jpg\" alt=\"Bulgarv2\" width=\"300\" height=\"327\" \/>Bulgur<\/b><\/h3>\n<p>A staple in the Middle East, <a href=\"https:\/\/www.ulprospector.com\/en\/na\/Food\/search?k=bulgur&amp;st=31\" target=\"_blank\" rel=\"noopener\">bulgur<\/a> is seen in tabbouleh salads, fried kibbeh, stuffed vegetables, meats, <a href=\"https:\/\/www.ulprospector.com\/en\/na\/Food\/search?k=pilaf&amp;st=31\" target=\"_blank\" rel=\"noopener\">pilafs<\/a> and as a key ingredient in stews. Bulgur is made from whole grain <a href=\"https:\/\/www.ulprospector.com\/en\/na\/Food\/search?k=hard+red+wheat&amp;st=31\" target=\"_blank\" rel=\"noopener\">hard red wheat<\/a>, which is parboiled, dried, and cracked, then sifted and labeled by particle size. The higher the number, the more fine the particle size, \u00a0and the change in particle size produces varying textures and cooking times for the finished product. Bulgur differs from cracked wheat due to the parboiling step, as it makes it quick-cooking, but can be used in similar applications where cracked wheat is cooked.<\/p>\n<p>In 2014, there were 96 products launched in Europe containing bulgur, while in North America, there were 32 products launched. When milled, it has a tan color and a sweet, slightly malted flavor. It has high levels of <a href=\"https:\/\/www.ulprospector.com\/en\/na\/Food\/Product\/search?k=Calcium&amp;sug=1&amp;st=31\" target=\"_blank\" rel=\"noopener\">calcium<\/a> and <a href=\"https:\/\/www.ulprospector.com\/en\/na\/Food\/search?k=vitamin+C&amp;st=31\" target=\"_blank\" rel=\"noopener\">vitamin C<\/a>, and it\u2019s a good source of protein.<\/p>\n<p>It is best known for it\u2019s connection with Ethiopian foods, and it&#8217;s a key ingredient for a fermented, batter-based spongy flat bread called injera.
